  1. In a mixing bowl whisk together the water, pumpkin, oil, maple syrup and vanilla extract.
  2. Add the dry ingredients and stir to just combine.
  3. Let the pancake batter sit for 8-10 minutes. While the batter rests, warm your griddle or frying pan and lightly oil it.
  4. Spoon 1/4 cup of batter onto the griddle, let brown before flipping and finish browning on the other side.
