Instructions
  1. In a food processor, process the dates until they are chopped in small bits.
  2. Add in the nuts and oats from the package. Process for 30 seconds.
  3. Add in peanut butter, tahini and 2 Tbs of water. Process for another 30 seconds to a minute. Until it comes together as a dough. If it remains crumbly, add the remaining water a bit at a time until it comes together. It should be a dry paste, not too gooey.
  4. Remove from the food processor, place ina covered bowl and refrigerate for an hour.
  5. An hour later: remove from fridge and spoon out enough dough to roll small balls (about 1/2 to 3/4 inch ball). This size makes them "pop-able" which is fun. If needed, wet hands to prevent too much sticking while forming balls.
  6. Roll in maple sugar to make a nice coating on the outside. Serve immediately or refrigerate and serve within a few days.
