In mixing bowl mix: 3/4 cup almond milk, 1/4 cup oil & 1 tsp vanilla extract
Combine wet with dry ingredients
Place in greased (or parchment-lined) 8x8” baking pan.
Bake in 350˚ oven (preheated) for 22-27 minutes.
Remove from oven & let cool completely.
Preheat oven to 350˚ and grease and line an 8x8" baking pan with parchment paper.
In a mixing bowl combine the wet cake ingredients.
Combine the wet ingredients with the Chocolate Baking Mix.
Pour batter into the prepared pan and bake 25 minutes. Let cool completely before icing.
While the cake is baking make the frosting.
In a mixing bowl, cream the shortening with either a hand or stand mixer.
Add the powdered sugar a few tablespoons at a time until fully combined.
Once the sugar is incorporated, add the vanilla extract and beat until combined.
Frost the cool cake and decorate with fresh berries.
