Instructions
  1. Preheat oven to 350º
  2. Oil or line your bread pan (a 4"x8" pan is perfect if you have it)
  3. In a mixing bowl, mash the bananas.
  4. Add oil, vinegar, vanilla & water and whisk together.
  5. Add the brown sugar to the dry ingredients & stir.
  6. Pour dry ingredients contents into wet ingredients, combine quickly. You have about 10-15 seconds to get this completely combined. If you over stir or stir for too long, the bread will not rise.
  7. Pour mixture into bread pan being careful not to break up any bubbles.
  8. Bake for 45 - 50 minutes or until internal temperature of the bread is 200º.
  9. Cool completely before slicing or serving. In fact, if you refrigerate for a couple of hours & use a sharp knife when cutting, you can get a beautiful thin slice of banana bread.

We love this recipe as mini-loaves that can be used for breakfast or dessert. Adjust bake time to about 25 minutes for mini-loaves (check the internal temperature reaches 200º if possible)
