Apple Pecan Pancake Muffins
Super fun way to get the flavor of pancakes. Totally pop-able! Total time commitment is about a half hour.

Instructions
  1. In mixing bowl mix: almond milk, oil, Maple Syrup, apple cider vinegar & vanilla extract
  2. Cut up an apple into small (less than 1/4”) pieces (peeled & cored)
  3. In a mixing bowl, combine wet ingredients with package contents
  4. Fold in the apple pieces and 1/4 cup of chopped pecan pieces (reserve some pecans for topping your muffins with)
  5. Place in greased mini-muffin baking pan. (These also work as full-sized muffins)
  6. Top with remaining pecan pieces and sprinkle with cinnamon.
  7. Bake mini-muffins in 350˚ oven (preheated) for 15-18 minutes ( full-sized muffins will need 22-27 minutes).
  8. Remove from oven & let cool completely.
  9. Shift a little cinnamon powdered and powdered sugar on top for serving.
