Instructions
  1. Preheat your oven to 350 degrees and grease your doughnut mold. These doughnuts are pretty sticky so greaser liberally with either shortening or vegan butter, liquid oil is not going to cut it!
  2. In a mixing bowl combine the wet ingredients.
  3. Add the Lemon Almond Baking Mix and ground cardamom and stir until just combined.
  4. Scoop batter into the prepared mold and bake for 20 minutes. When the doughnuts are done the cake will begin to pull away from the sides of the pan.
  5. While the doughnuts are baking, combine the sugar and cinnamon.
  6. When the doughnuts are done, remove from the mold (I use flexible spatula to help out the more stubborn doughnuts) and immediately dip both sides in cinnamon sugar.
  7. Let dry on a baking rack briefly before eating!
