  • Tart Cherries – contain many beneficial vitamins & minerals. They are known to have powerful antioxidants but new studies have shown that they have sleep enhancing2, anti-inflammatory, antioxidant, anticancer properties and even reduce stroke complications.3

Cherry Vanilla Biscotti

Making Biscotti is easy but you will need a bit of time. The total process can be done in as little as 1 1/2 hours with cooling time. First, you mix and bake in loaf form. With our mix this is pretty fast, about 1/2 hour (including the 22 minutes of cook time) *Then, I like to put the loaf on a cooling rack for 10 minutes or so and then into the fridge for 20 minutes or more. This makes the loaf congeal, making it easier to slice. Then the last half hour is for slicing, toasting, and re-cooling. You can split the process up baking on one day and toasting another if that suits your schedule better.

Ingredients:
  • 1 package Cherry Vanilla Biscotti Mix
  • 1/4 cup water
  • 1/4 cup organic oil (canola or other vegetable oil)
  • 1 tsp organic pure vanilla extract
Directions: (package=1 loaf, 25 slices)

1. In mixing bowl mix: 1/4 cup water, 1/4 cup oil & 1 tsp vanilla extract
2. Combine wet with dry ingredients
3. Place on a parchment lined baking sheet.
4. Form 13×3” loaf (dough will spread while baking)
5. Bake in 375˚ oven (preheated) for 20-25 minutes.
6. Remove from oven & let cool completely.*
7. Slice loaf into 1/3 inch wide slices, lay on side &
bake at 350˚ for 10 minutes on each side.

Cherry Vanilla Cookies

Cookies are fast and easy with this mix. Total time commitment is less than 20 minutes.

Ingredients:
  • 1 package Cherry Vanilla Biscotti Mix
  • 1/4 cup organic coconut milk
  • 1/4 cup organic oil (canola or other vegetable oil)
  • 1 tsp organic pure vanilla extract
Directions: (package= 15 – 30 cookies)

1. In mixing bowl mix: 1/4 cup coconut milk, 1/4 cup oil & 1 tsp vanilla extract
2. Combine wet with dry ingredients
3. Lined a baking sheet with parchment.
4. With a spoon, form about a 1 Tbsp to 1-1/2 Tbsp dough ball on parchment.
5. Bake in 350˚ oven (preheated) for 10-15 minutes (depending on size)
6. Remove from oven & let cool completely.

Cherry Vanilla Jam Cookies

Cookies are fast and easy with this mix. Total time commitment is less than 20 minutes.

Ingredients:
  • 1 package Cherry Vanilla Biscotti Mix
  • 2-3 Tbs organic cherry jam (Bonne Mamman brand works well though not organic)
  • 1/4 cup organic coconut milk
  • 1/4 cup organic oil (canola or other vegetable oil)
  • 1 tsp organic pure vanilla extract
Directions: (package= 15 – 30 cookies)

1. In mixing bowl mix: 1/4 cup coconut milk, 1/4 cup oil & 1 tsp vanilla extract
2. Combine wet with dry ingredients
3. Lined a baking sheet with parchment.
4. With a small ice cream scooper, form 1 Tablespoon to 1-1/2 Tablespoon dough balls.
5. Using a chopstick or skewer, poke a hole in the center. If you are making a larger cookie, you can use your finger to make the hole. Just be sure you have little walls on theses of the hole or all the jam will ooze out.
6. Place a bit of jam in the hole. The jam should be about level with the top the cookie.
7. Bake in 350˚ oven (preheated) for 10-15 minutes (depending on size)
6. Remove from oven & let cool completely.

Cherry Vanilla Cake

Cherry cake is a so easy with this mix. Total time commitment is about a half hour.

Ingredients:
  • 1 package Cherry Vanilla Biscotti Mix
  • 3/4 cup organic almond milk
  • 1/4 cup organic oil (canola or other vegetable oil)
  • 1 tsp organic pure vanilla extract
Directions: (package=1 8″ round cake)

1. In mixing bowl mix: 3/4 cup almond milk, 1/4 cup oil & 1 tsp vanilla extract
2. Combine wet with dry ingredients
3. Place in greased 8×8” baking pan.
4. Bake in 350˚ oven (preheated) for 25-30 minutes. The top should be slightly darker and a toothpick should come out clean when poked into the cake.
6. Remove from oven & let cool completely.

ADD ICING, EAT, ENJOY & DO THE CAKE DANCE!

Cherry Icing

This icing is really pretty and super-simple.

Ingredients:
  • 1 cup room temperature Earth Balance (brand, vegan) Buttery Spread
  • 3 cups powdered sugar, use organic sugar blended in a Vitamix (to avoid the corn) if possible
  • 2 Tablespoons organic Cherry Preserves
  • 1 tsp organic pure vanilla extract
Directions:

1. In mixing bowl place these ingredients at room temperature: 1 cup Earth Balance Buttery Spread (or Coconut Oil if avoiding corn), 1/2 cup powdered sugar, 2 Tablespoons Cherry Preserves & 1 tsp vanilla extract
2. Mix with a hand or stand mixer
3. Add the rest of the powdered sugar slowly and continue to mix until well combined.
4. Adjust consistency if you want it more pliable, add a bit of preserves. For a stiffer frosting, add more powdered sugar.


Cherry Vanilla Drizzle Loaf Cake

This English style cake is moist and so easy with this mix.

Ingredients:
  • 1 package Cherry Vanilla Biscotti Mix
  • 3/4 cup organic coconut milk
  • 1/4 cup organic oil (canola or other vegetable oil)
  • 1 tsp organic pure vanilla extract
  • 2 Tbsp organic sugar (raw organic if possible, Florida Crystals brand is vegan))
  • 1/4 cup warm water
Directions:

1. In mixing bowl mix: 3/4 cup coconut milk, 1/4 cup oil & 1 tsp vanilla extract
2. Combine wet with dry ingredients
3. Place in greased bread loaf baking pan.
4. Bake in 350˚ oven (preheated) for 45-50 minutes. Top should be slightly darker and toothpick should come out clean when poked into the cake.
5. Remove from oven, leave in loaf pan & prepare drizzle.
6. In a mixing bowl, stir up 2 Tablespoons of sugar and 1/4 Cup of warm water until the sugar dissolves.
7. Using a skewer or meat thermometer, poke about 10 holes in your loaf cake. Slowly pour the drizzle over the top of the warm cake, allowing the sugar water to soak in.
8. Let cool completely, (I like to refrigerate to get it really cool) then remove from the pan.
9. Make the cherry glaze and apply.

Cherry Glazing

This glazing is very simple and makes a cake feel complete without adding gobs of sugary topping.

Ingredients:
  • 2 Tbsp room temperature Earth Balance brand vegan Buttery Spread (replace with Miyoko’s brand European Style butter or coconut oil if avoiding corn products)
  • 1/3 cup organic powdered sugar, use organic sugar blended in a VitaMix (to avoid the corn) if possible
  • 2 Tbs organic coconut milk
  • 2 Tbs organic Cherry Preserves (just the juicy bit if possible)
Directions:

1. In mixing bowl cream the room temperature Earth Balance Buttery Spread with hand mixer or stand mixer.
2. Add Cherry Preserves & vanilla extract
3. Add the powdered sugar slowly and continue to mix until well combined.
4. Drizzle over your cold cake while the glaze is still room temperature. (Use a piping bag & tip or a small ziplock bag with the corner cut out, or simple let it drizzle off the end of a spoon)
5. Refrigerate immediately so that the glaze doesn’t fall off the cake.

Ready to eat once the glaze has hardened (about a 1/2 hour) Enjoy!!

Cherry Vanilla Eclair Cakes

This is as close as I have ever seen to a gooey eclair yum-fest. Total time commitment is about a half hour.

Ingredients:
  • 1 package Cherry Vanilla Biscotti Mix
  • 1 cup organic almond milk
  • 1/2 cup Earth Balance brand vegan Buttery Spread (replace with Miyoko’s brand European Style butter or coconut oil if avoiding corn products)
  • 1 tsp organic pure vanilla extract
Directions: (package=8 mini-loaves – 16 once cut open)

1. In mixing bowl mix: 1 cup almond milk, 1/2 cup vegan butter & 1 tsp vanilla extract
2. Combine wet with dry ingredients
3. Place in greased mini-loaf (bread) baking pans.
4. Bake in 350˚ oven (preheated) for 20-25 minutes. You want them still gooey inside (no eggs so totally safe 🙂 They should still be a bit soft on top when you take them out (the texture of pudding)
6. Remove from oven & let cool completely.
7. Carefully slice mini loaves in half horizontally, flip the tops over so cut side is up. (inside should still be a bit gooey)

8. Scoop out a bit of the inside (optional – if you leave it in it will add to the pudding texture of a traditional eclair)

TOP WITH COCONUT CREAM FILLING, EAT, ENJOY & FEEL 8 YEARS OLD AGAIN!

Coconut Cream filling

This creamy filling is perfect on top of your faux eclairs.

Ingredients:
  • 1 can cold organic coconut (cream only)* (refrigerate this for at least an hour before starting)
  • 1 – 1-1/2 cups organic powdered sugar, use organic sugar blended in a VitaMix (if avoiding corn)
  • 1 tsp organic pure vanilla extract
Directions:
  1. Put mixing bowl in fridge for a few minutes.
  2. Open your cold can of coconut, poke a hole in the hard cream on top, drain liquid out of bottom. Set aside (use in smoothies or as a drink). 
  3. Place cold coconut cream in cold mixing bowl and “cream” with hand mixer or stand mixer. You just want a bit of movement – don’t let it warm up too much.
  4. Add 1/4 cup powdered sugar and 1 tsp vanilla extract and mix.
  5. Add the rest of the powdered sugar slowly and continue to mix until well combined.
  6. Scoop (or place in a piping bag and use an icing tip) on to little cakes and serve immediately. If you have it, an icing tip will make this topping beautiful!

You can refrigerate these and bring back to room temperature before serving but they lose a little of the gooey-ness.
