St. Patrick's Day Cupcakes

Instructions
Cupcakes
  1. Preheat oven to 350 degrees and line your muffin tin.
  2. In a mixing bowl, combine the almond milk, oil and vanilla extract.
  3. Add the chocolate baking mix to the wet ingredients, quickly stir to combine.
  4. Scoop batter into the prepared muffin tin and bake 25-27 minutes.
  5. Remove from oven and let cool completely.
Green Frosting
  1. In a mixing bowl, cream the buttery spread with either a hand mixer or stand mixer.
  2. Slowly add the powdered sugar, 1/3 of a cup at a time until well combined.
  3. In a separate small bowl, combine water and spirulina powder. Stir until incorporated.
  4. Add the mint extract and the spirulina mixture (1 teaspoon at a time until you have the desired color) to the frosting, beating until combined. The frosting should have peaks that hold their shape. For a looser consistency add more spread, for a stiffer consistency add more sugar.
Orange Frosting
  1. In a mixing bowl, cream the buttery spread with either a hand mixer or stand mixer.
  2. Slowly add the powdered sugar, 1/3 of a cup at a time until well combined.
  3. Add the orange extract and carrot juice (1 teaspoon at a time until you have the desired color) to the frosting and beat until well combined. The frosting should have peaks that hold their shape. For a looser consistency add more spread, for a stiffer consistency add more sugar. The carrot juice can make the frosting a little loose. If that is the case with yours, you can pop the frosting in the fridge for 30 minutes to make it easier to pipe.
  4. To create your orange and green frosting swirl, fill the right side of a piping bag with orange frosting and the left side with the green frosting. Top each cupcake with a festive swirl!
