This recipe is completely sugar free and a great way to add some vegetables to your morning breakfast routine! We recommend using a flat whisk with our Yummy Pancakes Mix to get a great rise to your strata.
Preheat oven to 350 degrees. Oil an 8x8 baking pan and lay in a piece of parchment at the bottom. Leave yourself a little extra parchment paper on two sides to help get your strata out after baking!
Sauté vegetables in scant olive oil over medium heat until the peppers and onions are soft and the mushrooms have released their liquid.
In a large mixing bowl, combine oregano, basil, salt and nutritional yeast with the Yummy Pancakes Mix.
Add canola and water to your dry ingredients, use a flat whisk to combine completely but do not over mix.
Layer your strata in the prepared 8x8 baking pan, beginning with a layer of pancake mix. You should have enough to do two complete layers of pancake mix and vegetables. Spread out a thin layer of the remaining pancake mix and sprinkle remaining vegetables on top.
Let strata sit for 15 minutes before baking.
Bake at 350 degrees for 45 minutes or until the strata begins to pull away from the sides of the baking pan. The strata will not brown too much because there is no sugar in the Yummy Pancakes Mix.
Let cool to room temperature before slicing.
This savory vegan strata is a great make ahead recipe. Bake it the night before and you'll have a wonderful breakfast waiting for you in your fridge the next morning!
