Vegan Pear Basil Lemon Gluten-free Cake
Instructions
  1. Preheat oven to 350˚.
  2. Grease (with organic oil) the baking pan. Then place a piece of parchment on the bottom of your 9" round cake pan.
  3. Slice the pears and arrange in a circle. If there is any space left in the center put smaller pieces in the center.
  4. In a mixing bowl, cream together the brown sugar and buttery spread. Place over the pears in an even layer.
  5. In mixing bowl mix: almond milk, oil & vanilla extract
  6. Finely chop the basil leaves and mix into the dry mix, in a separate bowl.
  7. Combine wet with dry mix ingredients (Do not over mix)
  8. Bake in 350˚ oven (preheated) for 32 - 34 minutes.
  9. Remove from oven & let cool until firm, 15 - 30 minutes.
  10. Turn cake pan on to a cake plate and serve immediately or refrigerate and serve within a few days.
