Instructions
  1. Open pancake mix, locate the packet of baking soda (only packet in the bag).
  2. In a large mixing bowl, whisk together the pancake mix and baking soda.
  3. In a separate bowl, combine the wet ingredients.
  4. Combine wet ingredients with the dry ingredients using as few strokes as possible.
  5. Let the batter stand for 8-10 minutes.
  6. Spoon 1/4 cup of batter onto a lightly oiled 350 degree griddle or frying pan.
  7. Sprinkle chopped pecans onto the pancakes
  8. Brown both sides, flipping when the edges start to dry and bubbles burst.
