  1. Preheat oven to 375 degrees and line your muffin tin.
  2. Rinse cranberries and pick out any that are shriveled or too squishy. Give a quick rough chop.
  3. In a medium bowl whisk juice, applesauce, oil, maple syrup, sugar and orange extract to combine.
  4. Add Yummy Pancakes mix, salt and oats and stir just to combine.
  5. Stir in chopped cranberries and let the batter rest for 5-10 minutes.
  6. Pour batter into prepared muffin tin and bake 22 minutes or until the tops are golden and the centers are cooked through.
