Lemon Muffins
  1. Preheat oven to 350 degrees and line your muffin tin.
  2. Combine the wet ingredients in a medium bowl.
  3. Add the Lemon Almond Baking Mix to the wet ingredients and stir until just combined. Do this in a short period of time - the first 10 seconds after you pour the mix into the liquid.
  4. Pour cake batter into prepared muffin tin.
Topping
  1. Cut cold buttery spread into the brown sugar until crumbly.
  2. Stir in chopped fruits, nuts and lemon zest.
  3. Spread topping evenly over the muffin battter and press down slightly.
  4. Bake for 30 minutes, let cool completely before serving.
