Jeweled Lemon Almond Coffee Cake
This lemon cake is topped with a delicious layer of dried fruits and nuts!

  1. Preheat oven to 350 degrees. Grease an 8″ springform pan and line the bottom with parchment paper.
  2. Combine the wet ingredients in a medium bowl.
  3. Add the Lemon Almond Baking Mix to the wet ingredients and stir until just combined. Do this in a short period of time – the first 10 seconds after you pour the mix into the liquid.
  4. Pour cake batter into prepared 9″ springform pan.
Topping
  1. Cut cold buttery spread into the brown sugar until crumbly.
  2. Stir in chopped fruits, nuts and lemon zest.
  3. Spread topping evenly over the cake batter and press down slightly. Decorate with halved pecans and slivered almonds.
  4. Bake for 30-35 minutes, let cool completely before serving. You may need to run a knife along the outside before opening your springform pan as the topping can easily stick to the pan.
Recipe Notes

You can make this cake in an 8″ pan and bake 35 – 40 minutes or in a 10″ pan and bake about 25 minutes.
