Double Berry Bread
This gluten free and vegan loaf is bursting with berries! A wonderful treat to add to a brunch table or as an afternoon snack.

Loaf of gluten free and vegan double berry bread with 2 slices cut on a white and blue bread plate next to a package of GluFREEgan Easy Bread Mix
Instructions
  1. Preheat oven to 400 degrees and grease a loaf pan.
  2. If using frozen berries, rinse defrost and pat dry. If using fresh berries, rinse and pat dry. Make sure the berries are dry before adding to the bread mix so they don't add extra moisture to the batter!
  3. In a medium bowl combine the wet ingredients.
  4. Add the sugar and stir to combine.
  5. Once sugar is combined, stir in Easy Bread Mix in as few strokes as possible so that the bread rises nicely.
  6. Pour batter into the prepared loaf pan and bake 55-60 minutes until cooked through.
  7. Let cool completely before slicing.
Recipe Notes

You can use whatever berries you want, we made a blueberry/raspberry loaf and a blueberry/strawberry loaf and both were great!  If you can't decide, you could always make a Triple Berry Loaf, just don't use more than 1 cup of fruit as it will start to get too soggy.
