Chocolate Coconut Doughnuts
Who says gluten free and vegan can't be fun!? These glazed chocolate doughnuts get topped with tasty coconut flakes, but you could also use sprinkles or colored sugar to add a punch of color to the breakfast table.

Instructions
  1. Preheat oven to 375 degrees and grease your doughnut mold
  2. In a mixing bowl combine the wet ingredients
  3. Add the Chocolate Baking Mix, stirring until just combined.
  4. Pour the batter into the prepared doughnut molds and bake for 20 minutes.
  5. While the doughnuts are baking, make the glaze by whisking the powdered sugar, coconut milk and vanilla extract until smooth.
  6. Remove from the oven and let cool completely before dipping the top of the doughnuts in the glaze. While the glaze is still wet, dip the top of the doughnuts again in the coconut flakes (or sprinkles or colored sugar).
  7. If you want to get real fancy, you can go ahead and gold leaf your doughnuts. We did this for an art opening we catered at Real Eyes Gallery in Adams, MA. You want to make sure that the gold leaf you purchase is food grade. To apply gold leaf to food you will want to have a small sharp knife and a clean paint brush. Using a sharp knife, transfer a small piece of gold leaf to the doughnut and use the brush to smooth it out. Smaller pieces are easier to apply than larger pieces because gold leaf is very thin and wrinkles and folds on itself easily.
