Instructions
  1. In mixing bowl mix: coconut milk, oil & vanilla extract
  2. Combine wet with dry ingredients
  3. Line a baking sheet with parchment.
  4. Form 1 Tablespoon size dough balls by rolling dough between hands into little balls.
  5. Bake in 350˚ oven (preheated) for about 14 minutes
  6. Remove from oven & let cool for 5 minutes.
  7. Put the powdered sugar in a small mixing bowl. While still warm, roll the cookies in the powdered sugar. Set aside to cool. (You can refrigerate at this point if you are not serving for a day or two.
  8. When cookies are completely cool (and no more than a couple of hours before serving), roll in powdered sugar once again to get that bright white finish of a snowball. Enjoy!

Oddly, these actually take much less sugar to make than if you top with icing. Food for thought.
