In a mixing bowl whisk together vegan milk & lemon juice. Set aside.
In a separate mixing bowl, combine Easy Bread Mix, caraway seeds and sugar
Cream together soft vegan butter & wet ingredients.
Pour wet ingredients into dry, combine quickly. You have about 10-15 seconds to get this completely combined. If you over stir or stir for too long, the bread will not rise.
Pour mixture into bread pan being careful not to bread up any bubbles.
Bake for 45 minutes or until internal temperature of the breaad is 200º.
Cool completely before slicing or serving. In fact, if you refrigerate for a couple of hours & use a sharp knife when cutting, you can get a beautiful thin slice of bread that does not crumble.
We love this recipe as mini-loaves that can be used for cocktail hour with hummus or your favorite vegan cheese. Adjust bake time to about 25 minutes for mini-loaves (check the internal temperature reaches 200º if possible)
