Apple Ginger Upside Down Cake
This dense cake only uses maple syrup as a sweetener (and it's delicious!) This could be a healthy choice for dessert or a sweet treat for breakfast.

Instructions
  1. Preheat oven to 350 degrees. Grease 8" cake pan and place parchment on bottom.
  2. In a large bowl combine contents of Yummy Pancake Mix with ground ginger.
  3. In a separate bowl combine the wet ingredients.
  4. Combine wet and dry ingredients with as few strokes as possible.
  5. Let set for 8-10 minutes.
  6. Slice the apples and arrange in two concentric fans in the bottom of your prepared cake pan.
  7. Mix the lemon juice with the maple syrup and pour over the apples.
  8. Pour cake batter over the apples and bake at 350 degrees for 40-45 minutes.
  9. Let cool slightly before turning out onto a plate. Slice and enjoy!
