These tender, tasty cookies are the answer for your picky eaters! We substitute cooked acorn squash for the liquid in this easy recipe to boost the nutrition content and add a note of sweet roasted squash. This works great with both our Chocolate Baking Mix and our Lemon Almond Baking Mix.

  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk squash and vanilla extract.
  3. Add baking mix and stir until just combined.
  4. With a small ice cream scooper, form 1/2 Tablespoon to 1-1/2 Tablespoon dough balls.
  5. Bake for 10-15 minutes (depending on size)
  6. Remove from oven and allow to cool completely.
