Chocolate Biscotti

Making Biscotti is easy but you will need a bit of time. The total process can be done in as little as 1 1/2 hours with cooling time. First, you mix and bake in loaf form. With our mix this is pretty fast, about 1/2 hour (including the 22 minutes of cook time) *Then, I like to put the loaf on a cooling rack for 10 minutes or so and then into the fridge for 20 minutes or more. This makes the loaf congeal, making it easier to slice. Then the last half hour is for slicing, toasting, and re-cooling. You can split the process up baking on one day and toasting another if that suits your schedule better.

Ingredients:
  • 1 package Chocolate Biscotti Mix
  • 1/4 cup water
  • 1/4 cup organic oil (canola or other vegetable oil)
  • 1 teaspoon (tsp) organic pure vanilla extract
Directions: (package=1 loaf, 25 slices)

1. In mixing bowl mix: 1/4 cup water, 1/4 cup oil & 1 tsp vanilla extract
2. Combine wet with dry ingredients
3. Place on a parchment lined baking sheet.
4. Form 13” x 3” loaf (dough will spread while baking)
5. Bake in 375˚ oven (preheated) for 20-25 minutes.
6. Remove from oven & let cool completely.*
7. Slice loaf into 1/3 inch wide slices, lay on side &
bake at 350˚ for 10 minutes on each side.

Chocolate-Covered Biscotti Dip

I am a big fan of chocolate and really pretty food, so… Dip your biscotti and make super tasty, beautiful snacks.

Ingredients:
  • 1 cup Callebaut Dark Chocolate –  (or the dark chocolate fo your choice, even bakers chocolate will do)
  • chopped organic pecans and/or shredded organic coconut for decorating
Directions:

1. Put your double boiler. Put about 1 to 2 inches of water in the bottom pan, and put the pan on the stove on medium heat. Make sure that the bottom of the top pan will not be touching the water when it is inserted into the bottom pan.  (If you don’t have a double boiler, no worries, a pot with a bit of water in the bottom and a stainless steel bowl on top will do) Place chocolate in top pan/bowl and allow to melt – DO NOT COVER – You don’t want any steam or water getting in your chocolate.
2. Once melted, transfer to a warm bowl or flat dish in order to dip your biscotti

3. Sprinkle with chopped nuts or shredded coconut and lay on a plate or cookie sheet lined with a piece of parchment.
4. Refrigerate to set the chocolate.

Chocolate Cookies

Cookies are fast and easy with this mix. Total time commitment is less than 20 minutes.

Ingredients:
  • 1 package Chocolate Biscotti Mix
  • 1/4 cup organic vegan milk (or water)
  • 1/4 cup organic oil (canola or other vegetable oil)
  • 1 tsp organic pure vanilla extract
Directions: (package= 15 – 30 cookies)

1. In mixing bowl mix: 1/4 cup water (or vegan milk), 1/4 cup oil & 1 tsp vanilla extract
2. Combine wet with dry ingredients
3. Lined a baking sheet with parchment.
4. With a small ice cream scooper, form 1/2 Tablespoon to 1-1/2 Tablespoon dough balls.
5. Bake in 350˚ oven (preheated) for 10-15 minutes (depending on size)
6. Remove from oven & let cool completely.

EAT, ENJOY & REJOICE!

Chocolate Chip Cookies

Cookies are fast and easy with this mix. Total time commitment is less than 20 minutes.

Ingredients:
  • 1 package Chocolate Biscotti Mix
  • 1/2 cup dark chocolate chips (Enjoy Life brand are very nice)
  • 1/4 cup coconut milk
  • 1/4 cup oil (canola or other vegetable oil)
  • 1 teaspoon pure vanilla extract
Directions: (package= 15 – 30 cookies)

1. In mixing bowl mix: 1/4 cup coconut milk, 1/4 cup oil & 1 tsp vanilla extract
2. Combine wet ingredients with mix contents (stir until just combined)
3. fold in chocolate chips
3. Line a baking sheet with parchment paper and spoon about a Tablespoon out for each cookie. These cookies tend to hold their shape so form as you want them.
4. Bake in 350˚ oven (preheated) for 13-16 minutes
6. Remove from oven & let cool completely.

Chocolate Jam Cookies

Gooey inside, crunchy outside with a cake-y cookie fluff. Total time commitment is less than 30 minutes.

Ingredients:
  • 1 package Chocolate Biscotti Mix
  • 2-3 Tbs organic raspberry jam (Bonne Mamman brand works well though not organic)
  • 1/4 cup organic cashew milk (or any vegan milk)
  • 1/4 cup organic oil (canola or other vegetable oil)
  • 1 tsp organic pure vanilla extract
Directions: (package= 15 – 30 cookies – depending on size)

1. In mixing bowl mix: 1/4 cup cashew milk, 1/4 cup oil & 1 tsp vanilla extract
2. Combine wet with dry ingredients
3. Lined a baking sheet with parchment.
4. With a small ice cream scooper, form 1 Tablespoon to 1-1/2 Tablespoon dough balls.
5. Using a chopstick or skewer, poke a hole in the center. If you are making a larger cookie, you can use your finger to make the hole. Just be sure you have little walls on the sides of the hole or all the jam will ooze out.
6. Place a bit of jam in the hole. The jam should be about level with the top the cookie.
7. Bake in 350˚ oven (preheated) for 14-18 minutes
8. Remove from oven & let cool completely.

Chocolate Sandwich Cookies

These are as close to Oreos as you can get but filled with nutrition (high protein mix) and without any additives. Have fun with the variations too!

Ingredients:
  • 1 package Chocolate Biscotti Mix
  • 1/4 cup water
  • 1/4 cup organic oil (canola or other vegetable oil)
  • 1 tsp organic pure vanilla extract
Directions: (package= 15 – 30 cookies)

1. In mixing bowl mix: 1/4 cup water, 1/4 cup oil & 1 tsp vanilla extract
2. Combine wet with dry ingredients
3. Lined a baking pan with parchment.
4. Place dough on a piece of parchment on the counter, cover with another piece of parchment. Roll out with a rolling pin until about 1/8 – 1/4” thick.
5. Cut dough with cookie cutter, and gently place on parchment lined baking pan.
6. Bake in 350˚ oven (preheated) for 10-15 minutes (depending on size)
7. Remove from oven & let cool completely.

Filling for Sandwich Cookies

This filling can be made almost any flavor, for instance, for mint flavor, add 1/2 teaspoon of mint extract, for orange add 1 teaspoon of orange extract…

Ingredients:
  • 1 cup room temperature organic vegetable shortening
  • 3 cups organic powdered sugar, use organic sugar blended in a VitaMix (to avoid the corn)
  • 2 Tbsp Cocoa powder (leave out if going for pure vanilla flavor)
  • 2 tsp organic pure vanilla extract (replace this with any extract to your liking to create fun flavors)
Directions:

1. In mixing bowl place these ingredients at room temperature: 1 cup shortening, 2 Tablespoons Cocoa Powder & 1 tsp vanilla extract
2. Mix with hand or stand mixer
3. Add the powdered sugar slowly (a few Tablespoons at a time) and continue to mix until well combined.
4. spread on bottom cookie and top with a second cookie to make a sandwich
  (you can also put this in a piping bag to make a beautiful swirl between your cookies)

Chocolate Cake

Cake is a cinch with this mix. Total time commitment is about a half hour.

Ingredients:
  • 1 package Chocolate Biscotti Mix
  • 3/4 cup organic almond milk
  • 1/4 cup organic oil (canola or other vegetable oil)
  • 1 tsp organic pure vanilla extract
Directions: (package=1 8″ round cake or two 6″ round cakes)

1. In mixing bowl mix: 3/4 cup almond milk, 1/4 cup oil & 1 tsp vanilla extract
2. Combine wet with dry ingredients
3. Place in greased (or parchment-lined) 8×8” baking pan.
4. Bake in 350˚ oven (preheated) for 22-27 minutes.
6. Remove from oven & let cool completely.

ADD ICING, EAT, ENJOY & DO THE CAKE DANCE!

Cream Cheese Frosting

This icing is really pretty and super-simple.

Ingredients:
  • 1 (8-ounce) package of  Daiya Cream Cheeze, softened
  • 1/4 cup room temperature Earth Balance (brand, soy-free vegan) Buttery Spread
  • 1-1/2 cups organic powdered sugar, use organic sugar blended in a VitaMix (to avoid the corn) if possible
  • 1 tsp organic pure vanilla extract
Directions:

1. Cream the cream cheese with a hand or stand mixer.
2. Add buttery spread and continue to mix with electric mixer.
3. Add the powdered sugar slowly (a 1/2 cup at a time) and continue to mix until well combined.
4. Add vanilla extract and beat until well blended.

Chocolate Icing

This icing is really pretty and super-simple.

Ingredients:
  • 1 cup room temperature Earth Balance brand Buttery Spread (vegan)
  • 3 cups organic powdered sugar, use organic sugar blended in a VitaMix (to avoid the corn) if possible
  • 2 Tbsp Cocoa powder
  • 1 tsp organic pure vanilla extract
Directions:

1. In mixing bowl place these ingredients at room temperature: 1 cup Earth Balance Buttery Spread (or Coconut Oil if avoiding corn), 2 Tablespoons Cocoa Powder & 1 tsp vanilla extract
2. Mix with a hand or stand mixer
3. Add the powdered sugar slowly (a few Tablespoons at a time) and continue to mix until well combined.
4. For a stiffer frosting, add more powdered sugar.


Chocolate Creme-y Mini Cupcakes

These are almost like eclairs – soft in the middle. Yum!

Ingredients:
  • 1 package Chocolate Biscotti Mix
  • 1 cup organic coconut milk
  • 1/4 cup vegan butter (Earth Balance or Miyoko’s)
  • 1 tsp organic pure vanilla extract
Directions: (package=30 mini-cupcakes cake)

1. Over a low stove, in a small pan, melt the vegan butter.
2. Take off heat and add 1 cup coconut milk & 1 tsp vanilla extract
3. In a mixing bowl, combine wet ingredients with package contents
3. Place in greased mini-muffin baking pan.
4. Bake in 350˚ oven (preheated) for 11-13 minutes. (You want them still gooey inside – there are no eggs so it’s ok if they are a bit gooey) – If serving as a cupcake, bake 18-20 minutes
6. Remove from oven & let cool completely.
7. Slice mini-muffins in half horizontally, flip top over so cut side is up.

TOP WITH COCONUT CREAM FILLING, EAT, ENJOY & FEEL 8 YEARS OLD AGAIN!

Coconut Cream Topping

This filling is sweet & creamy.

Ingredients:
  • 1 can cold organic coconut milk (cream only – refrigerate this for at least an hour before starting)
  • 1 – 1-1/2 cups powdered sugar, use organic sugar blended in a VitaMix (if avoiding corn)
  • 1 teaspoon pure vanilla extract
Directions:
  1. Put mixing bowl in fridge for a few minutes.
  2. Open your cold can of coconut, poke a hole in the hard cream on top, drain liquid out of bottom. Set aside (use in smoothies or as a drink). 
  3. Add cold coconut cream, 1/4 cup powdered sugar and 1 tsp vanilla extract to cold mixing bowl.
  4. Mix with hand (or stand) mixer
  5. Add the rest of the powdered sugar slowly and continue to mix until well combined.
  6. Adjust consistency if you want it more fluffy use less sugar. For a stiffer filling, add more powdered sugar.
  7. Scoop on to little cakes and serve immediately (or refrigerate up to 24 hours). If you have it, an icing tip will make this topping beautiful!
